Recipe of the Week: Spinach Salad!

Summer time seems to be upon us and now is the time to eat right & light. Here is my Go to salad of choice. I could eat this thing every damn day. So fresh and light. Give it a go and enjoy!

Ingredients: 

  • spinach 2 cups 
  • quinoa optional 1/2 cup
  • grilled chicken optional 
  • finely chopped red onion 
  • green onion chopped 
  • kalamata olives 
  • feta cheese 
  • sunflower seeds or any seed or nut 
  • dried cranberry 

Dressing: half of lemon squeezed, two table spoons olive oil, one tablespoon ACV,half tablespoon balsamic ,  salt and pepper too taste. 

  • lemon 
  • acv
  • olive oil & balsamic 
  • salt and pepper

 

Mix salad ingredients together and toss with dressing! SUPER SIMPLE AND DELICIOUS!
